Ingredients

The base

  • 1.5 cups egg whites
  • 1 cup cottage cheese
  • ½ cup monterey jack cheese, shredded
  • ½ cup feta cheese, crumbled
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

The vegetables

  • 1 red bell pepper finely chopped
  • 1 cup spinach or kale, finely chopped
  • 3 tablespoons green onion, sliced thin

The oil

  • 1 teaspoon olive oil

Instructions

  1. 1. Preheat the oven to 350°F and prepare an 8-inch baking dish with cooking spray or oil.
  2. 2. Sauté the bell pepper, spinach, and green onion in olive oil for 3-4 minutes, then allow to cool.
  3. 3. In a large bowl, combine the egg whites, cottage cheese, monterey jack cheese, feta cheese, salt, and pepper. Blend until smooth.
  4. 4. Mix in the cooled vegetables and pour the mixture into the prepared baking dish.
  5. 5. Bake for 35-45 minutes until the quiche is golden brown and firm in the middle.
