Instructions
- 1. Preheat the oven to 350°F and prepare an 8-inch baking dish with cooking spray or oil.
- 2. Sauté the bell pepper, spinach, and green onion in olive oil for 3-4 minutes, then allow to cool.
- 3. In a large bowl, combine the egg whites, cottage cheese, monterey jack cheese, feta cheese, salt, and pepper. Blend until smooth.
- 4. Mix in the cooled vegetables and pour the mixture into the prepared baking dish.
