Spinach Quiche

Ingredients

The base

  • 2 tbsp Olive oil
  • 1 medium Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 6 cups Fresh spinach (packed and roughly chopped)
  • 8 large Eggs
  • cup Heavy cream
  • ½ tsp Sea salt
  • ½ tsp Black pepper
  • ½ tsp Baking powder (optional)

The cheese

  • 1 cup Swiss cheese (shredded)
  • 1 cup Cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Heat olive oil in a large skillet and sauté diced onion for 5-6 minutes until translucent.
  3. Add minced garlic and stir for 1 minute until fragrant.
  4. Stir in fresh spinach and cook until soft, about 2 minutes, then remove from heat.
  5. In a large bowl, whisk together eggs, heavy cream, salt, pepper, and baking powder.
  6. Combine the spinach mixture with the egg mixture and stir in the shredded cheeses.
  7. Pour the mixture into a 9-inch pie pan or baking dish and bake for 30-35 minutes until set.
