Instructions
- Preheat the oven to 350°F (177°C).
- Heat olive oil in a large skillet and sauté diced onion for 5-6 minutes until translucent.
- Add minced garlic and stir for 1 minute until fragrant.
- Stir in fresh spinach and cook until soft, about 2 minutes, then remove from heat.
- In a large bowl, whisk together eggs, heavy cream, salt, pepper, and baking powder.
- Combine the spinach mixture with the egg mixture and stir in the shredded cheeses.
- Pour the mixture into a 9-inch pie pan or baking dish and bake for 30-35 minutes until set.
