Spinach Cheese Quiche

Instructions
- Preheat the oven to 350°F and prebake the pie shells for 5-7 minutes until slightly puffed.
- Cook the spinach according to package instructions and drain excess water.
- Sauté the chopped onion in butter with ¼ tsp black pepper and ⅛ tsp salt over medium heat until softened.
- Add the spinach and nutmeg to the onions, stir for 1-2 minutes, then remove from heat.
- In a large bowl, mix 1½ cups cheese, milk, eggs, and the remaining salt and pepper.
- Combine the spinach and onion mixture with the egg mixture and mix well.
- Pour half of the mixture into each pie shell and bake at 375°F for 25-30 minutes until the center is firm.
