Spinach Cheese Quiche

Ingredients

The crust

  • 2 pie shells of choice

The filling

  • 10 oz. frozen chopped spinach
  • ¼ cup onion, chopped
  • Tbsp butter
  • ½ tsp pepper
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • 2 cups cheese (Colby Jack/Cheddar/Mozzarella or a blend)
  • 2 cups whole milk
  • 4 eggs

Instructions

  1. Preheat the oven to 350°F and prebake the pie shells for 5-7 minutes until slightly puffed.
  2. Cook the spinach according to package instructions and drain excess water.
  3. Sauté the chopped onion in butter with ¼ tsp black pepper and ⅛ tsp salt over medium heat until softened.
  4. Add the spinach and nutmeg to the onions, stir for 1-2 minutes, then remove from heat.
  5. In a large bowl, mix 1½ cups cheese, milk, eggs, and the remaining salt and pepper.
  6. Combine the spinach and onion mixture with the egg mixture and mix well.
  7. Pour half of the mixture into each pie shell and bake at 375°F for 25-30 minutes until the center is firm.
