Bacon and Corn Quiche

Ingredients

  • 4 slices center cut bacon
  • 1 9 inch frozen pie crust
  • 3 oz shredded 2% milk sharp cheddar cheese
  • 1 cup frozen corn kernels
  • 4 large eggs
  • ¾ cup skim milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chopped fresh chives

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  2. Cook the bacon as per package directions, drain on paper towels, and chop into pieces.
  3. Place the frozen pie crust on the baking sheet and cover the edges with aluminum foil.
  4. Sprinkle shredded cheese on the bottom of the pie crust, followed by the bacon pieces and corn kernels.
  5. In a bowl, whisk together the eggs, milk, salt, pepper, and chives, then pour over the filling in the pie crust.
  6. Bake in the oven for 15 minutes at 425°F, then reduce the heat to 350°F, remove the foil, and bake for an additional 25-30 minutes until set.
  7. Allow to cool for a few minutes before slicing into 8 pieces and serving.
