Ingredients

Vegetable Mixture

  • ½ cup chopped celery
  • ¾ cup chopped onion
  • 4 cloves garlic, minced
  • 2 cups lightly steamed broccoli

Base Ingredients

  • 1 cup cooked brown rice
  • 3 eggs
  • ¾ cup coconut milk
  • 1 tsp Herbamare seasoning

Instructions

  1. Preheat the oven to 350 degrees.
  2. Sauté the chopped celery, chopped onion, and minced garlic until softened.
  3. In a bowl, combine the sautéed vegetables with cooked brown rice and lightly steamed broccoli.
  4. In a separate bowl, mix together the eggs, coconut milk, and Herbamare seasoning.
  5. Combine all ingredients and pour the mixture into a greased 8x8 dish.
  6. Bake in the preheated oven for 40 minutes.
