Ingredients

The quiche base

  • 6 large eggs
  • cup whole milk
  • ¼ cup half-and-half
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon Dijon mustard (optional)
  • 1 pinch ground nutmeg (optional)
  • cups mix-ins of choice
  • cup grated Gruyère cheese
  • 2 tablespoons chopped fresh chives

Mix-ins (optional)

  • as needed cooked crumbled bacon
  • as needed chopped and sautéed broccoli
  • as needed caramelized onions
  • as needed cubed leftover ham
  • as needed roasted vegetables (roughly chopped)

Instructions

  1. Preheat the oven to 350°F and coat a deep 9-inch pie dish with nonstick spray.
  2. Prepare any mix-ins you want to use.
  3. In a large mixing bowl, whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  4. Scatter the mix-ins evenly across the bottom of the prepared pie dish and sprinkle the cheese on top.
  5. Pour the egg mixture over the cheese and sprinkle chives on top.
  6. Place the dish on a rimmed baking sheet and bake for about 35 minutes until the center is set and golden at the edges.
  7. Let cool for a few minutes, then cut into wedges and enjoy warm.
