Instructions
- Prepare the pie crust ahead of time and chill it for at least 2 hours.
- Roll out the chilled pie dough and fit it into a 9-inch pie dish, then chill again.
- Preheat the oven to 375°F (190°C).
- Partially blind bake the crust by lining it with parchment paper and filling with weights, baking for about 15-16 minutes.
- Remove the weights and prick the bottom of the crust, then bake for an additional 7-8 minutes until lightly browned.
- Reduce the oven temperature to 350°F (177°C).
- In a bowl, beat together the eggs, milk, heavy cream, salt, and pepper until combined.
- Whisk in your chosen add-ins and pour the mixture into the crust.
- Bake the quiche for 45-55 minutes until the center is just about set.
- Let it cool for 15 minutes before serving.
