Ingredients

The crust

  • 1 ¼ cups unbleached all-purpose flour
  • ½ tsp granulated sugar
  • ½ tsp salt
  • 10 Tbsp unsalted butter
  • 2 - 4 Tbsp ice water

The filling

  • 5 large eggs
  • 1 ¼ cups heavy cream
  • 1 ¼ cups chopped ham
  • 1 cup shredded cheese
  • cup chopped green onions
  • 2 Tbsp chopped parsley
  • to taste salt
  • to taste black pepper

Instructions

  1. Prepare the crust by whisking together flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse meal.
  3. Add ice water gradually until the dough holds together.
  4. Shape the dough into a disk, wrap, and chill for 1 hour.
  5. Roll out the dough and transfer it to a pie dish, shaping it accordingly.
  6. Chill the crust again for 20 minutes while preheating the oven to 350°F.
  7. Blind bake the crust covered with foil and weights for 25 minutes, then remove the cover and bake for an additional 10 minutes.
  8. In a bowl, whisk the eggs and mix in the heavy cream, ham, cheese, green onions, parsley, salt, and pepper.
  9. Pour the filling into the baked crust.
  10. Bake the quiche until the center is just set, about 45 to 55 minutes.
  11. Let the quiche rest for a few minutes before slicing and serving.
