Ingredients

The crust

  • cups pastry flour

  • ½ cup cold butter
  • 3–4 tablespoons ice water

The custard

  • 3 extra-large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • ¾ teaspoon salt
  • ⅛–¼ teaspoon nutmeg (optional)

The add-ins

  • 1 cup grated melty cheese
  • 1–2 tablespoons tender herbs
  • 2 cups veggies
  • 3–4 strips crispy bacon (optional)

Instructions

  1. Make the crust dough and refrigerate for at least 30 minutes.
  2. Blind-bake the pie crust at 375°F for about 15 minutes, then remove weights and bake for an additional 7-10 minutes until golden.
  3. Prepare the custard by blending eggs, cream, milk, nutmeg, and salt until smooth.
  4. Prep any fillings by sautéing or steaming vegetables.
  5. Assemble the quiche by adding half of the custard and cheese to the crust, followed by the fillings, and top with remaining cheese and custard.
  6. Bake the quiche at 350°F for 45-60 minutes until golden and slightly wobbly in the center.
  7. Let cool for 15 minutes before serving.
