Broccoli Frittata

Instructions
- Preheat the oven to 350°F and lightly coat a 9-inch pie dish with cooking spray.
- If the chicken is not cooked, cook and shred it, then set aside.
- In a skillet, heat olive oil and sauté broccoli and red peppers until softened, about 5 minutes.
- Add green onions, garlic, salt, and pepper to the skillet and cook for an additional minute, then remove from heat.
- In a bowl, whisk together the eggs, then stir in cheese, chicken, and the sautéed vegetables.
- Pour the mixture into the prepared pie dish and bake for 40 minutes until nearly set.
- Let the frittata cool for 5 minutes before serving.
