Broccoli Frittata

Ingredients

  • 8 large eggs
  • ½ cup sharp cheddar cheese, freshly grated
  • 6 ounces cooked chicken breast, diced or shredded
  • 2 cups broccoli florets, chopped
  • 1 large red bell pepper, diced
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F and lightly coat a 9-inch pie dish with cooking spray.
  2. If the chicken is not cooked, cook and shred it, then set aside.
  3. In a skillet, heat olive oil and sauté broccoli and red peppers until softened, about 5 minutes.
  4. Add green onions, garlic, salt, and pepper to the skillet and cook for an additional minute, then remove from heat.
  5. In a bowl, whisk together the eggs, then stir in cheese, chicken, and the sautéed vegetables.
  6. Pour the mixture into the prepared pie dish and bake for 40 minutes until nearly set.
  7. Let the frittata cool for 5 minutes before serving.
