Instructions
- Preheat the oven to 425°F.
- In a large bowl, whisk together eggs, milk, garlic, ¼ teaspoon salt, and black pepper.
- Stir in half of the cheese and set aside.
- In a cast iron skillet, heat olive oil over medium heat and sauté onion with remaining salt until tender.
- Add broccoli and water, cover, and steam until broccoli is bright green.
- Stir in spinach and green onions, cooking until spinach wilts.
- Spread the vegetable mixture evenly in the skillet.
- Pour the egg mixture over the vegetables and sprinkle with remaining cheese.
- Bake in the oven until the center is just set, about 12 to 15 minutes.
- Let the frittata rest for 5 to 10 minutes before slicing and serving.
