Broccoli, Cheddar & Spinach Frittata

Ingredients

  • 8 pieces SimplyNature Organic Cage Free Eggs
  • ½ cup milk of choice
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper
  • 1 cup freshly grated cheddar cheese
  • 1 tablespoon SimplyNature Organic Extra Virgin Olive Oil
  • 1 small yellow onion
  • cup water
  • 2 cups thinly sliced broccoli florets
  • 2 cups SimplyNature Organic Baby Spinach
  • cup thinly sliced green onions

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, whisk together eggs, milk, garlic, ¼ teaspoon salt, and black pepper.
  3. Stir in half of the cheese and set aside.
  4. In a cast iron skillet, heat olive oil over medium heat and sauté onion with remaining salt until tender.
  5. Add broccoli and water, cover, and steam until broccoli is bright green.
  6. Stir in spinach and green onions, cooking until spinach wilts.
  7. Spread the vegetable mixture evenly in the skillet.
  8. Pour the egg mixture over the vegetables and sprinkle with remaining cheese.
  9. Bake in the oven until the center is just set, about 12 to 15 minutes.
  10. Let the frittata rest for 5 to 10 minutes before slicing and serving.
