Instructions
- Preheat the oven to 400ºF.
- In a bowl, whisk together eggs, egg whites, milk, and a pinch of salt.
- Heat coconut oil in an oven-safe skillet over medium-high heat.

- Add chopped spinach and cook until just wilted.
