Ingredients

The base

  • 8 count eggs
  • 8 count egg whites
  • 3 tablespoons milk

The vegetables

  • 1 tablespoon coconut oil
  • 1 count shallot
  • 1 cup baby bell peppers
  • 5 ounces baby spinach

The seasoning

  • 3 ounces feta cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400ºF.
  2. In a bowl, whisk together eggs, egg whites, milk, and a pinch of salt.
  3. Heat coconut oil in an oven-safe skillet over medium-high heat.
  4. Sauté sliced shallot and baby bell peppers until soft and fragrant.
  5. Add chopped spinach and cook until just wilted.
  6. Pour the egg mixture over the vegetables and sprinkle feta cheese on top.
  7. Bake in the oven for 10-12 minutes until cooked through.
  8. Slice and enjoy once cool enough to handle.
