Spinach Feta Frittata

Instructions
- Squeeze all water from the spinach.
- Heat olive oil in a 9-inch non-stick sauté pan over medium heat.
- Add the onion and scallions, cooking until soft (about 4 minutes).
- In a medium bowl, beat the eggs and mix in salt, pepper, cheeses, and spinach.
- Pour the egg mixture into the skillet and cook until the bottom sets (about 5 minutes).
- Invert the frittata onto a large plate and slide it back into the pan.
- Cook for an additional 5 minutes.
- Serve hot.
