Spinach Feta Frittata

Ingredients

  • 2 whole eggs
  • 8 large egg whites
  • 1 tsp olive oil
  • ½ red onion finely chopped
  • 3 scallions chopped
  • 10 oz frozen chopped spinach, thawed
  • 2 oz crumbled feta
  • 2 tbsp Parmigiano-Reggiano, grated
  • to taste salt
  • to taste freshly ground pepper

Instructions

  1. Squeeze all water from the spinach.
  2. Heat olive oil in a 9-inch non-stick sauté pan over medium heat.
  3. Add the onion and scallions, cooking until soft (about 4 minutes).
  4. In a medium bowl, beat the eggs and mix in salt, pepper, cheeses, and spinach.
  5. Pour the egg mixture into the skillet and cook until the bottom sets (about 5 minutes).
  6. Invert the frittata onto a large plate and slide it back into the pan.
  7. Cook for an additional 5 minutes.
  8. Serve hot.
