Ingredients

  • 6 egg whites egg whites
  • 1 large egg
  • 1 teaspoon olive oil
  • 1 clove garlic
  • 6 spears asparagus
  • 1 cup fresh spinach
  • 2 green onions green onions
  • ¼ cup feta cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the egg whites and whole egg in a small bowl and set aside.
  3. Heat olive oil in a small frying pan and cook the garlic for 1-2 minutes.
  4. Add asparagus, spinach, and green onions to the pan and cook until tender.
  5. Pour the egg mixture over the vegetables and sprinkle half of the feta cheese on top.
  6. Cook on low heat for about 5-6 minutes until the eggs are mostly set.
  7. Sprinkle the remaining feta cheese on top and transfer the pan to the oven.
  8. Bake for 10-15 minutes until the frittata is firm and the cheese is melted.
  9. Cut into wedges and serve.
