Instructions
- Preheat the oven to 350°F.
- Whisk together the egg whites and whole egg in a small bowl and set aside.
- Heat olive oil in a small frying pan and cook the garlic for 1-2 minutes.
- Add asparagus, spinach, and green onions to the pan and cook until tender.
- Pour the egg mixture over the vegetables and sprinkle half of the feta cheese on top.
- Cook on low heat for about 5-6 minutes until the eggs are mostly set.
- Sprinkle the remaining feta cheese on top and transfer the pan to the oven.
- Bake for 10-15 minutes until the frittata is firm and the cheese is melted.
- Cut into wedges and serve.
