Baked Asparagus Frittata

Ingredients

The frittata

  • 6 large eggs
  • cup milk
  • ½ cup crumbled goat cheese
  • 1 ½ teaspoons Dijon mustard
  • big pinch salt
  • heaping tablespoon finely chopped shallot
  • big pinch sea salt
  • freshly ground black pepper

The asparagus

  • handful thin asparagus
  • drizzle olive oil
  • big squeeze fresh lemon juice

Instructions

  1. Preheat the oven to 400°F and prepare a 9-inch square baking pan with parchment paper.
  2. In a bowl, mix eggs, milk, goat cheese, shallot, mustard, and salt until well combined.
  3. Pour the egg mixture into the prepared pan and bake for 10 minutes.
  4. Meanwhile, prepare the asparagus by rinsing, trimming, and tossing with olive oil, lemon juice, salt, and pepper.
  5. After 10 minutes, place the asparagus on top of the frittata and return to the oven for another 15 minutes.
  6. Once done, let the frittata rest, then slice and serve warm or at room temperature.
