Baked Asparagus Frittata

Instructions
- Preheat the oven to 400°F and prepare a 9-inch square baking pan with parchment paper.
- In a bowl, mix eggs, milk, goat cheese, shallot, mustard, and salt until well combined.
- Pour the egg mixture into the prepared pan and bake for 10 minutes.
- Meanwhile, prepare the asparagus by rinsing, trimming, and tossing with olive oil, lemon juice, salt, and pepper.
- After 10 minutes, place the asparagus on top of the frittata and return to the oven for another 15 minutes.
- Once done, let the frittata rest, then slice and serve warm or at room temperature.
