Asparagus Frittata with Goat Cheese

Instructions
- Preheat the oven to 400ºF.
- Sauté the asparagus in olive oil over medium-high heat for 5 minutes.
- Add leeks and sauté until both vegetables are tender, about 5 more minutes.
- In a large bowl, beat together the eggs with salt and pepper.
- Pour the egg mixture into the skillet with the vegetables and sprinkle goat cheese on top.
- Transfer the skillet to the oven and bake until the top is lightly golden, about 10 minutes.
- Slice and serve warm.
