Asparagus Frittata with Goat Cheese

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • ½ bunch asparagus, cut into 1-inch pieces
  • 1 cup thinly sliced leeks
  • 8 whole eggs, beaten
  • 2 oz chèvre, crumbled
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400ºF.
  2. Sauté the asparagus in olive oil over medium-high heat for 5 minutes.
  3. Add leeks and sauté until both vegetables are tender, about 5 more minutes.
  4. In a large bowl, beat together the eggs with salt and pepper.
  5. Pour the egg mixture into the skillet with the vegetables and sprinkle goat cheese on top.
  6. Transfer the skillet to the oven and bake until the top is lightly golden, about 10 minutes.
  7. Slice and serve warm.
