Ingredients

The frittata

  • 4 eggs lightly beaten
  • ½ cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons butter
  • 8 ounces asparagus, chopped into 2-inch pieces
  • 4 ounces goat cheese, softened

The salad

  • 1 cup arugula
  • 2 radishes thinly sliced
  • ½ teaspoon capers
  • 2 tablespoons white wine vinaigrette

Seasoning

  • ¼ teaspoon salt
  • 1 pinch black pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Whisk together eggs, Parmesan cheese, chives, salt, and pepper in a medium bowl.
  3. Melt butter in a large skillet over medium-high heat, then add asparagus and cook until tender.
  4. Pour the egg mixture into the skillet and dot with goat cheese.
  5. Cook until the edges begin to set, then transfer the pan to the oven and bake until fully set.
  6. In a bowl, combine arugula, radishes, capers, and vinaigrette; toss to mix.
  7. Cut the frittata into quarters and serve with the salad.
