Instructions
- Preheat the oven to 400 degrees.
- Whisk together eggs, Parmesan cheese, chives, salt, and pepper in a medium bowl.
- Melt butter in a large skillet over medium-high heat, then add asparagus and cook until tender.
- Pour the egg mixture into the skillet and dot with goat cheese.
- Cook until the edges begin to set, then transfer the pan to the oven and bake until fully set.
- In a bowl, combine arugula, radishes, capers, and vinaigrette; toss to mix.
- Cut the frittata into quarters and serve with the salad.
