Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the eggs, milk, garlic, salt, and pepper.
  3. Heat olive oil in a cast-iron skillet over medium heat.
  4. Add scallions and broccoli, cooking until tender and bright green.
  5. Stir in smoked paprika, then add the egg mixture and shake the pan to distribute.
  6. Sprinkle with feta and bake for 15 to 20 minutes until the eggs are set.
  7. Season to taste and serve.
