Ingredients

The base

  • 6 large eggs

The filling

  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 1 bell pepper (diced)
  • 1 cup spinach
  • 1 cup crumbled cooked bacon
  • ½ cup shredded cheese
  • fresh herbs to garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Whisk together the eggs, milk, salt, and pepper in a large bowl and set aside.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add diced onion and bell pepper, sauté for 5 minutes until soft.
  5. Add spinach and crumbled bacon, sauté for 1 minute.
  6. Pour the egg mixture into the skillet, ensuring it covers the vegetables evenly. Cook for 3 to 4 minutes until the bottom sets.
  7. Sprinkle cheese evenly on top.
  8. Transfer the skillet to the oven and bake for 12 to 15 minutes until eggs are set and cheese is melted.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh herbs, slice, and serve.
