Instructions
- Preheat the oven to 375°F.
- Whisk together the eggs, milk, salt, and pepper in a large bowl and set aside.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced onion and bell pepper, sauté for 5 minutes until soft.
- Add spinach and crumbled bacon, sauté for 1 minute.
- Pour the egg mixture into the skillet, ensuring it covers the vegetables evenly. Cook for 3 to 4 minutes until the bottom sets.
- Sprinkle cheese evenly on top.
- Transfer the skillet to the oven and bake for 12 to 15 minutes until eggs are set and cheese is melted.
- Remove from the oven and let cool for a few minutes. Garnish with fresh herbs, slice, and serve.
