  • ¼ cup crumbled feta cheese
  • 1 shallot, chopped
  • 2 cups spinach
  • 2 cups halved cherry tomatoes
  • ½ cup chopped asparagus
  • ½ cup frozen peas, thawed
  • ¼ cup chopped tarragon or chives
  • 12 ounces mixed mushrooms, chopped
  • cup grated pecorino cheese
  • ¾ cup halved mini mozzarella balls
  • ½ cup sliced fresh basil leaves

Instructions

  1. Preheat the oven to 400°F.
  2. Whisk together the eggs, almond milk, garlic, and salt until well combined.
  3. Choose a vegetable variation and sauté the corresponding vegetables in olive oil until tender.
  4. Add the egg mixture to the skillet, gently shaking to distribute.
  5. Sprinkle cheese on top and bake in the oven for 15 to 20 minutes until the eggs are set.
  6. Allow to cool slightly before slicing and serving.
