Ingredients

The base

  • 8 large eggs
  • ¼ cup milk

The vegetables

  • 1 cup zucchini
  • ½ cup red bell pepper
  • ½ cup green pepper
  • ¼ cup yellow onion
  • 2 teaspoons minced garlic

The seasoning

  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 375ºF.
  2. Whisk together the eggs and milk in a large bowl and set aside.
  3. Prepare the vegetables by dicing them into bite-sized pieces.
  4. Heat olive oil in a nonstick oven-safe skillet over medium/high heat.
  5. Add garlic, onion, peppers, and zucchini to the skillet and season with salt and pepper.
  6. Sauté the vegetables until the onions are translucent, about 5 minutes.
  7. Spray the sides of the pan with cooking spray.
  8. Pour the egg mixture over the vegetables, ensuring everything is submerged.
  9. Bake in the oven for 16-18 minutes or until fully cooked in the middle.
  10. Remove from the oven and serve.
