Instructions
- Preheat the oven to 375ºF.
- Whisk together the eggs and milk in a large bowl and set aside.
- Prepare the vegetables by dicing them into bite-sized pieces.
- Heat olive oil in a nonstick oven-safe skillet over medium/high heat.
- Add garlic, onion, peppers, and zucchini to the skillet and season with salt and pepper.
- Sauté the vegetables until the onions are translucent, about 5 minutes.
- Spray the sides of the pan with cooking spray.
- Pour the egg mixture over the vegetables, ensuring everything is submerged.
- Bake in the oven for 16-18 minutes or until fully cooked in the middle.
- Remove from the oven and serve.
