Ingredients

The base

  • 3 tablespoons full-fat dairy
  • ½ teaspoon salt
  • 1 cup grated or crumbled cheese

The vegetables

  • 3 to 5 cups chopped vegetables or greens

The cooking fat

  • 1 tablespoon olive oil

Garnish

Instructions

  1. Preheat the oven to 425°F for stovetop or 350°F for baked methods.
  2. Whisk eggs, dairy, and salt in a bowl until blended. Optionally, mix in half of the cheese.
  3. Heat olive oil in a skillet, add vegetables starting with dense ones, then softer ones, and cook until tender.
  4. For stovetop: Pour egg mixture over vegetables, stir briefly, and sprinkle remaining cheese on top. Bake until puffed.
  5. For baked casserole: Mix cooled vegetables into egg mixture, pour into a greased pan, and bake until puffed.
  6. For mini frittatas: Mix cooled vegetables into egg mixture, fill greased muffin cups, and bake until puffed.
