Instructions
- Preheat the oven to 425°F for stovetop or 350°F for baked methods.
- Whisk eggs, dairy, and salt in a bowl until blended. Optionally, mix in half of the cheese.
- Heat olive oil in a skillet, add vegetables starting with dense ones, then softer ones, and cook until tender.
- For stovetop: Pour egg mixture over vegetables, stir briefly, and sprinkle remaining cheese on top. Bake until puffed.
- For baked casserole: Mix cooled vegetables into egg mixture, pour into a greased pan, and bake until puffed.
- For mini frittatas: Mix cooled vegetables into egg mixture, fill greased muffin cups, and bake until puffed.
