Gouda Mac and Cheese

Ingredients

The pasta

  • 1 lb elbow macaroni

The cheese sauce

  • 4 tablespoons salted butter
  • 4 tablespoons all-purpose flour
  • 8 oz Gouda cheese, shredded
  • 8 oz sharp cheddar cheese, shredded
  • cups whole milk
  • ½ teaspoon table salt
  • teaspoon black pepper

The topping

  • ½ cup panko bread crumbs
  • 1 tablespoon salted butter, melted
  • ½ teaspoon paprika
  • 1 tablespoon Romano cheese or parmesan
  • ½ teaspoon parsley, finely chopped

Instructions

  1. Boil water in a large pot and add salt.
  2. Melt butter in a small saucepan and whisk in flour to make a roux, cooking for a few minutes.
  3. Heat milk in another saucepan until hot but not boiling.
  4. Combine hot milk with the roux and simmer the sauce for a few minutes.
  5. Cook the macaroni in boiling water until fully cooked, then drain.
  6. Stir shredded Gouda and cheddar into the sauce until melted.
  7. Combine the cheese sauce with the cooked macaroni.
  8. Toast panko breadcrumbs in a skillet until golden, then mix with melted butter, paprika, Romano cheese, and parsley.
  9. Pour the mac and cheese into a dish and top with the breadcrumb mixture before serving.
