30-Minute Gouda Mac and Cheese

Ingredients

The pasta

  • 16 ounces elbow noodles

The sauce

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 pound sharp cheddar cheese, shredded
  • 1 pound gouda cheese, shredded
  • ½ pound smoked gouda, shredded
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

Topping

  • 2 tablespoons butter
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat the broiler to high.
  2. Cook the pasta in salted water according to package directions, then drain.
  3. Melt butter in a large saucepan over medium heat.
  4. Add flour and whisk until golden brown.
  5. Add milk and cook for 6 minutes until it thickens.
  6. Reduce heat to low, add all but ½ cup of cheese, and cook until melted.
  7. Stir in mustard, salt, black pepper, and cayenne.
  8. Melt butter in a large oven-safe skillet, add panko, and cook for 5 minutes until browned.
  9. Toss drained pasta and cheese sauce in the skillet.
  10. Top with remaining cheese and breadcrumbs, then broil for 2 to 4 minutes until cheese is melted.
