Baked Smoked Bacon Gouda Mac and Cheese

Ingredients

The cheese

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup parmigiano reggiano, shredded
  • 1 cup fontina cheese, shredded
  • 2 cups gouda cheese, shredded
  • ½ cup muenster cheese, cut into small chunks

The pasta

  • 1 pound elbow macaroni

The sauce

  • 3-4 cups milk
  • 3 tablespoons flour
  • 4 tablespoons butter
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons bread crumbs

Seasonings

  • to taste salt
  • to taste pepper
  • to taste onion powder

Instructions

  1. Preheat the oven to 375°F.
  2. Boil salted water in a large pot and cook the macaroni for about 5 minutes.
  3. Drain the macaroni and rinse it with cold water to stop the cooking process.
  4. In a saucepan, melt the butter over medium heat, then whisk in the flour to create a slurry.
  5. Add milk to the slurry and stir, then mix in half of the cheese until melted.
  6. Season the mixture and taste for seasoning.
  7. Combine the pasta with the cheese sauce in a large pot.
  8. Layer the pasta and cheese mixture in a baking pan, adding bacon and breadcrumbs on top.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Cool slightly before serving.
