Ingredients

The filling

  • 3 Tbsp. extra-virgin olive oil
  • 1 10-oz. package instant chana masala
  • 5 oz. baby spinach

The dough

  • 1 lb. store-bought pizza dough
  • 1 large egg
  • 2 tsp. sesame seeds
  • All-purpose flour (for surface)

The yogurt sauce

  • 1 cup plain whole-milk yogurt
  • 2 Tbsp. extra-virgin olive oil
  • Kosher salt
  • Kashmiri or other red chile powder or paprika (for serving; optional)

Instructions

  1. Preheat the oven to 400° and prepare a baking sheet with olive oil.
  2. In a pot, heat 1 Tbsp. olive oil and cook the spinach until wilted, then mix it with the chana masala.
  3. Divide the pizza dough into 4 portions and roll each into a round, then fill with the spinach mixture and seal.
  4. Brush the pockets with the beaten egg and sprinkle with sesame seeds before baking until golden brown.
  5. Prepare the yogurt sauce by whisking together yogurt, olive oil, and salt, then serve with the pockets.
