Thai Chickpea and Veggie Pizza

Ingredients

The pizza

  • 1 crust pizza crust
  • ½ can chickpeas
  • ½ cup carrots, sliced into matchsticks
  • ½ cup zucchini, sliced into matchsticks
  • ½ cup red peppers, sliced into matchsticks
  • 2 pieces green onions, sliced

The sauce

  • 1 recipe light and creamy peanut sauce

Instructions

  1. Wash and slice all veggies and drain the chickpeas.
  2. Prepare the peanut sauce if not made already.
  3. Prepare the pizza crust or take out a store-bought crust.
  4. Roast the carrots, red peppers, zucchini, and chickpeas on a parchment-lined cookie sheet at 350°F (180°C) for about 5-10 minutes to soften them.
  5. Coat the pizza crust generously with the peanut sauce.
  6. Add the chickpeas and gently press them down, then add the carrots, zucchini, and red peppers.
  7. Sprinkle with sliced green onions and bake according to the crust directions or until the chickpeas are crispy.
