Instructions
- Wash and slice all veggies and drain the chickpeas.
- Prepare the peanut sauce if not made already.
- Prepare the pizza crust or take out a store-bought crust.
- Roast the carrots, red peppers, zucchini, and chickpeas on a parchment-lined cookie sheet at 350°F (180°C) for about 5-10 minutes to soften them.
- Coat the pizza crust generously with the peanut sauce.
- Add the chickpeas and gently press them down, then add the carrots, zucchini, and red peppers.
- Sprinkle with sliced green onions and bake according to the crust directions or until the chickpeas are crispy.
