BBQ Chickpea Deep Dish Pizza

Ingredients

The pizza crust

  • 2 ¼ teaspoons yeast
  • 1 cup lukewarm water
  • a pinch sugar
  • 2 ½ cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt

The pizza toppings

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • to taste salt and black pepper
  • 1 tablespoon water
  • 1 red bell pepper seeded and thinly sliced
  • 1 14.5-ounce can chickpeas
  • ⅓ - ½ cup barbecue sauce
  • 8 ounces gouda

Instructions

  1. Prepare the yeast mixture by whisking together yeast, ¼ cup of water, and a pinch of sugar; let it sit until foamy.
  2. In a stand mixer, combine 2 cups of bread flour, olive oil, salt, and the remaining water.
  3. Add the foamy yeast mixture to the flour mixture and mix until well combined.
  4. If the dough is sticky, add more flour and mix on medium-high speed for 4 minutes.
  5. Cover the dough and let it rise in a warm place until doubled in size, about 30 minutes.
  6. Preheat the oven to 425ºF.
  7. In a skillet, heat olive oil and sauté sliced onions with salt for 8-10 minutes until caramelized.
  8. Add water to the onions and sauté for another 3-4 minutes, then add bell pepper slices and cook until tender.
  9. Stir in the chickpeas and season with salt and pepper.
  10. Grease a 12-inch oven-proof pan and spread the dough to the edges.
  11. Spread ⅓ cup of barbecue sauce on the dough and top with grated gouda and the vegetable mixture.
  12. Drizzle with additional barbecue sauce as desired.
  13. Bake for 15 minutes until the cheese is bubbling and the crust is golden brown.
  14. Let cool for 5 minutes before slicing and serving.
