BBQ Chickpea Deep Dish Pizza

Instructions
- Prepare the yeast mixture by whisking together yeast, ¼ cup of water, and a pinch of sugar; let it sit until foamy.
- In a stand mixer, combine 2 cups of bread flour, olive oil, salt, and the remaining water.
- Add the foamy yeast mixture to the flour mixture and mix until well combined.
- If the dough is sticky, add more flour and mix on medium-high speed for 4 minutes.
- Cover the dough and let it rise in a warm place until doubled in size, about 30 minutes.
- Preheat the oven to 425ºF.
- In a skillet, heat olive oil and sauté sliced onions with salt for 8-10 minutes until caramelized.
- Add water to the onions and sauté for another 3-4 minutes, then add bell pepper slices and cook until tender.
- Stir in the chickpeas and season with salt and pepper.
- Grease a 12-inch oven-proof pan and spread the dough to the edges.
- Spread ⅓ cup of barbecue sauce on the dough and top with grated gouda and the vegetable mixture.
- Drizzle with additional barbecue sauce as desired.
- Bake for 15 minutes until the cheese is bubbling and the crust is golden brown.
- Let cool for 5 minutes before slicing and serving.
