Indian-Inspired Chilli Chickpea Pizza

Ingredients

The pizza base and toppings

  • 1 medium green bell pepper
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1 pound pizza dough
  • 1 14 ounce can chickpeas
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons scallions
  • 1-2 tablespoons tahini sauce

The sauce

  • ½ cup tomato paste
  • ¼ cup rice wine vinegar
  • ¼ cup maple syrup
  • ¼ cup soy sauce
  • 2 cloves garlic
  • 2 teaspoons sriracha sauce
  • 1 teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 425°F and place a pizza stone or baking sheet inside to preheat.
  2. Toss the sliced peppers and onions with 1 tablespoon of olive oil and place them in a roasting pan or on a baking sheet.
  3. Roll the pizza dough into a 14-inch round on a floured surface and transfer it to the preheated stone or sheet, brushing the top with the remaining olive oil.
  4. Bake the crust and veggies for about 20 minutes until the crust is lightly browned and the veggies are tender.
  5. In a saucepan, combine tomato paste, vinegar, maple syrup, soy sauce, minced garlic, sriracha, cayenne, and chickpeas. Stir and simmer for 3-4 minutes until the sauce thickens slightly.
  6. Spread the chickpea mixture over the baked crust, top with roasted peppers and onions, sprinkle with scallions and cilantro, and drizzle with tahini before serving.
