Ingredients

Cauliflower Crust

  • 1 piece cooked chicken breast, diced
  • cup diced red pepper
  • cup diced fresh pineapple
  • ¼ cup diced green onions
  • cups shredded mozzarella

Thai Chili Sauce

  • ¼ cup rice vinegar
  • ¼ cup water
  • tablespoons honey
  • ½ teaspoon fresh grated ginger
  • 1 teaspoon minced garlic clove
  • ½ teaspoon chili sauce
  • ½ teaspoon arrowroot

Instructions

  1. Make the cauliflower crust and place it on a greased parchment paper lined baking sheet.
  2. Preheat the oven to 450°F.
  3. In a small sauce pot, combine rice vinegar and water, and bring to a boil.
  4. Add honey, ginger, garlic, and chili sauce to the pot and simmer for 5 minutes.
  5. Stir in the arrowroot and whisk until dissolved and the sauce thickens, then remove from heat.
  6. Spread the Thai chili sauce over the cauliflower crust, then top with chicken, pineapple, red pepper, green onion, and cheese.
  7. Bake for 10 minutes or until the cheese is melted.
