Light BBQ Chicken Pizza

Ingredients

The crust

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • ½ cup cornmeal
  • 2 large eggs
  • 2 teaspoons Italian seasoning

The toppings

  • ½ cup barbecue sauce
  • 1 cup cooked, shredded chicken
  • ¾ cup shredded Mozzarella cheese
  • to taste thinly sliced red onions
  • to taste fresh cilantro

Instructions

  1. Chop the cauliflower into medium pieces and sauté in olive oil until browned and tender-crisp.
  2. Let the cooked cauliflower cool for a few minutes.
  3. Preheat the oven to 450°F (232°C).
  4. In a blender, combine eggs, cornmeal, Italian seasoning, and the cooled cauliflower, and blend until smooth.
  5. Spread the batter onto a parchment-lined pizza pan to form a crust about ½ inch thick.
  6. Bake the crust for about 20 minutes until golden brown.
  7. Coat the shredded chicken with barbecue sauce.
  8. Top the baked crust with barbecue chicken, half of the cheese, red onions, and the remaining cheese.
  9. Bake for an additional 10-15 minutes until the cheese is melted and golden.
  10. Top with fresh cilantro, slice, and serve.
