Light BBQ Chicken Pizza

Instructions
- Chop the cauliflower into medium pieces and sauté in olive oil until browned and tender-crisp.
- Let the cooked cauliflower cool for a few minutes.
- Preheat the oven to 450°F (232°C).
- In a blender, combine eggs, cornmeal, Italian seasoning, and the cooled cauliflower, and blend until smooth.
- Spread the batter onto a parchment-lined pizza pan to form a crust about ½ inch thick.
- Bake the crust for about 20 minutes until golden brown.
- Coat the shredded chicken with barbecue sauce.
- Top the baked crust with barbecue chicken, half of the cheese, red onions, and the remaining cheese.
- Bake for an additional 10-15 minutes until the cheese is melted and golden.
- Top with fresh cilantro, slice, and serve.
