Ingredients

The crust

The sauce

  • cup brown rice syrup (or corn syrup)
  • 6 pieces chiles (e.g., Fresno peppers)
  • 1–2 cloves garlic
  • 2 tablespoons rice vinegar

The pineapple pico de gallo

  • 1 whole pineapple, cored (about 2–3 cups diced)
  • 1 piece red bell pepper, diced
  • 1 piece red onion, diced
  • ½ cup fresh cilantro
  • to taste lime juice, salt, and honey

The pizza toppings

  • 2 cups shredded cheese (e.g., Queso Chihuahua)
  • 1 lb grilled chicken breast, thinly sliced

Instructions

  1. Prepare the crust by combining sugar, warm water, and yeast; let it rest until frothy.
  2. Mix in the flours and salt to form a dough, knead for a few minutes, and let it rest in a warm spot for about 30 minutes.
  3. For the sauce, blend the sauce ingredients until smooth, then simmer in a saucepan until thickened.
  4. Prepare the pineapple pico de gallo by mixing all the ingredients together.
  5. Preheat the oven to 425 degrees Fahrenheit.
  6. Divide the dough in half and roll out each piece into a thin crust, then bake for 10 minutes until partially cooked.
  7. Top the crusts with sauce, chicken, pineapple pico de gallo, and cheese, then bake for another 10 minutes until bubbly.
  8. Garnish with additional cilantro and red pepper flakes before serving.
