Quickie Black Eyed Peas and Greens

Ingredients

  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 3 15 oz. cans black eyed peas
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • tsp cayenne pepper
  • ¼ tsp freshly cracked black pepper
  • 2 cups vegetable broth
  • 4 oz. fresh spinach

Instructions

  1. Dice the onion and mince the garlic, then sauté them in olive oil until soft.
  2. Drain the black eyed peas and add them to the pot with the spices and vegetable broth.
  3. Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes.
  4. Smash some peas against the pot to thicken the broth, or blend a portion if desired.
  5. Stir in the fresh spinach until wilted, then adjust seasoning to taste.
  6. Serve hot with bread or rice.
