Instructions
- Dice the onion and mince the garlic, then sauté them in olive oil until soft.
- Drain the black eyed peas and add them to the pot with the spices and vegetable broth.
- Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes.
- Smash some peas against the pot to thicken the broth, or blend a portion if desired.
- Stir in the fresh spinach until wilted, then adjust seasoning to taste.
- Serve hot with bread or rice.
