Instructions
- Soak black eyed peas in a large pot covered with water overnight.
- Drain the peas and add onion, garlic, smoked paprika, Cajun seasoning, black pepper, broth, and 3 cups of water.
- Bring the mixture to a boil, then reduce heat and simmer for one hour, stirring occasionally.
- Add the diced tomatoes and lemon juice, then cook for an additional 15-20 minutes until peas are tender.
- Taste and add salt if needed, then garnish with parsley and olive oil before serving.
