Southern Black Eyed Peas with Smoked Turkey

Ingredients

  • 1 teaspoon olive oil
  • 1 cup chopped white onion
  • 3 cloves garlic
  • 6 cups chicken broth
  • 1 pound dried black eyed peas
  • 1 pound smoked turkey leg
  • 1 teaspoon Creole seasoning
  • 1 leaf bay leaf

Instructions

  1. Soak the black eyed peas in boiling water for 1 hour, then drain.
  2. Heat olive oil in a Dutch oven or soup pot over medium-high heat.
  3. Sauté the onions and garlic until translucent and fragrant.
  4. Add chicken broth, black eyed peas, smoked turkey, Creole seasoning, and bay leaf to the pot and stir.
  5. Cover the pot and reduce heat to medium-low, cooking for 2-3 hours until the beans are soft.
  6. Remove the bay leaf and smoked turkey from the pot. Shred the turkey and return it to the pot if desired.
  7. Taste and adjust seasoning with salt and pepper before serving.
