Instructions
- Add the soaked and drained Black Eyed Peas to a slow cooker.
- Pour in the broth and add the ham hock, bacon, onion, bay leaf, rosemary, jalapeño, garlic, smoked paprika, and thyme. Stir well.
- Cover and cook on high for 4 hours or low for 6 hours.
- Add the salt, pepper, balsamic vinegar, and collards if using. Stir again.
- Cook for another 1 to 2 hours until the beans are done and the meat is tender.
- Remove the bay leaf and rosemary stems, adjust salt if necessary, and serve.
