Instant Pot Black Eyed Peas

Instructions
- Set the Instant Pot to sauté mode and cook the bacon until crispy.
- Add the smoked turkey or sausage and cook for a few more minutes, then set aside.
- Sauté the onion, celery, garlic, jalapeno, thyme, and bay leaf for a couple of minutes.
- Pour in the chicken broth and scrape any browned bits from the bottom of the pot.
- Add the black-eyed peas, collard greens, and the bacon and sausage mixture back in.
- Season with Creole seasoning, paprika, salt, and pepper.
- Cook on high pressure for 15 minutes, allowing for 10 minutes of natural pressure release before manually releasing the rest.
- Set to sauté mode to adjust the consistency if needed, remove the bay leaf, and serve.
