Instant Pot Black Eyed Peas

Ingredients

  • 1 pound black eyed peas
  • 4-5 slices bacon, chopped
  • 1 cup smoked sausage or turkey, diced
  • 1 large onion, diced
  • 1 stalk celery, diced
  • 2-3 teaspoons minced garlic
  • 1 whole jalapeno, minced (optional)
  • 2 teaspoons fresh thyme, minced
  • 1 leaf bay leaf
  • 6 cups chicken broth
  • 2 cups collard greens
  • 1-2 teaspoons Creole seasoning
  • 1 teaspoon paprika (optional)
  • to taste salt and pepper

Instructions

  1. Set the Instant Pot to sauté mode and cook the bacon until crispy.
  2. Add the smoked turkey or sausage and cook for a few more minutes, then set aside.
  3. Sauté the onion, celery, garlic, jalapeno, thyme, and bay leaf for a couple of minutes.
  4. Pour in the chicken broth and scrape any browned bits from the bottom of the pot.
  5. Add the black-eyed peas, collard greens, and the bacon and sausage mixture back in.
  6. Season with Creole seasoning, paprika, salt, and pepper.
  7. Cook on high pressure for 15 minutes, allowing for 10 minutes of natural pressure release before manually releasing the rest.
  8. Set to sauté mode to adjust the consistency if needed, remove the bay leaf, and serve.
