Instant Pot Black Eyed Peas with Bacon

Ingredients

  • 16 ounces dried black-eyed peas
  • 1 tablespoon avocado oil
  • 8 ounces bacon
  • 1 medium onion
  • 1 rib celery
  • 2 medium carrots
  • 1 medium jalapeño
  • 6 cups chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

  1. Rinse the black-eyed peas and set aside.
  2. Set the Instant Pot to high sauté and add the oil, bacon, onion, celery, carrots, and jalapeño.
  3. Cook for about 8 minutes until the bacon is cooked and the vegetables are tender.
  4. Pour ½ cup of the broth into the pot and scrape up any browned bits.
  5. Add the remaining broth, black-eyed peas, salt, and pepper.
  6. Cancel the sauté function and place the lid on the pressure cooker.
  7. Set the steam release knob to sealing and select Manual/Pressure Cook for 25 minutes.
  8. After cooking, let the steam release naturally for 10 minutes, then do a quick release.
