Southern Instant Pot Black Eyed Peas

Ingredients

  • 1 Tbsp Olive Oil
  • 1 lg Onion, chopped
  • 2 Bay Leaves
  • 6 cloves Garlic, minced
  • 1 lb Dry Black-Eyed Peas, rinsed
  • 1 lb Smoked Ham Hock
  • 4 slices Thick Cut Smoky Bacon, chopped
  • 5 cups Water
  • 2 tsp Better Than Bouillon Ham or Chicken Base, low sodium
  • ¼ tsp Pepper

Instructions

  1. 1. Sauté the onion in olive oil until translucent.
  2. 2. Add bay leaves and garlic, cooking briefly.
  3. 3. Add the remaining ingredients and cancel the sauté setting.
  4. 4. Seal the lid and set the steam release knob to sealing.
  5. 5. Pressure cook for 16 minutes on high pressure.
  6. 6. Allow a natural release for 15 minutes, then vent remaining pressure.
  7. 7. Open the lid, remove bay leaves, and shred the ham hock meat back into the pot.
  8. 8. Adjust seasoning with salt if needed and serve, optionally with cornbread or rice.
