Vegan Instant Pot Black Eyed Peas

Instructions
- 1. Set the Instant Pot to 'saute' mode and heat the olive oil.
- 2. Add the diced onion and bell pepper, and saute until softened.
- 3. Stir in the garlic and optional jalapeno, cooking until the garlic is lightly browned.
- 4. Add the Cajun seasoning, salt, smoked paprika, black pepper, black-eyed peas, and vegetable broth, stirring to combine.
- 5. Lock the lid in place, set the vent to 'sealing', and cook on high pressure for 25 minutes.
- 6. Allow the pressure to release naturally for about 15 minutes before opening the lid.
- 7. Taste and adjust seasoning as needed before serving.
