Ingredients

The base

  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 green bell pepper chopped
  • 3 cloves garlic, minced
  • 1 small jalapeno, diced (optional)

The seasoning

  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon smoked paprika
  • teaspoon black pepper

The peas and broth

  • 1 cup dry black-eyed peas, rinsed
  • 2 cups vegetable broth

Instructions

  1. 1. Set the Instant Pot to 'saute' mode and heat the olive oil.
  2. 2. Add the diced onion and bell pepper, and saute until softened.
  3. 3. Stir in the garlic and optional jalapeno, cooking until the garlic is lightly browned.
  4. 4. Add the Cajun seasoning, salt, smoked paprika, black pepper, black-eyed peas, and vegetable broth, stirring to combine.
  5. 5. Lock the lid in place, set the vent to 'sealing', and cook on high pressure for 25 minutes.
  6. 6. Allow the pressure to release naturally for about 15 minutes before opening the lid.
  7. 7. Taste and adjust seasoning as needed before serving.
