Black Eyed Pea Soup

Ingredients

The soup base

  • 1.25 cups uncooked black eyed peas
  • 3-4 cups spinach
  • 1 can Amy’s split pea soup
  • 1 can crushed tomatoes
  • ½ cup non-dairy milk

Seasonings and oils

  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tbsp chia seeds (optional)
  • ¾ tsp sea salt
  • to taste ground black pepper

Instructions

  1. Cook black eyed peas according to package directions.
  2. In a large pot, combine the rest of the ingredients and cook over low-medium heat, stirring well.
  3. Once the peas are nearly done, rinse and drain them, then add to the soup.
  4. Cook on low for an additional 20 minutes.
  5. Serve and optionally sprinkle with sesame seeds or another seed of your choice.
