Ingredients

The zucchini boats

  • 3 whole zucchini

The filling

  • 1 pound ground beef
  • ½ cup chopped onions
  • 2 cloves garlic
  • ½ packet taco seasoning
  • ½ cup shredded cheddar cheese (for mixing)
  • 1 cup shredded cheddar cheese (for topping)
  • 1 whole jalapeno (optional)
  • ½ cup sour cream
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped black olives
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Trim the ends of the zucchini and cut them in half horizontally.
  3. Scoop out the flesh from the center of the zucchini to create boats.
  4. In a skillet, cook garlic and onions until fragrant.
  5. Add ground beef, reserved zucchini flesh, taco seasoning, salt, and pepper, and cook until the beef is no longer pink.
  6. Mix in ½ cup of shredded cheese until melted.
  7. Place the zucchini boats in a baking dish and fill them with the beef mixture.
  8. Top with 1 cup of shredded cheese.
  9. Bake for 20 minutes until the zucchini is soft and the cheese is melted.
  10. Serve with toppings like sour cream, olives, jalapenos, and cilantro.
