Instructions
- Preheat the oven to 375°F.
- Trim the ends of the zucchini and cut them in half horizontally.
- Scoop out the flesh from the center of the zucchini to create boats.
- In a skillet, cook garlic and onions until fragrant.
- Add ground beef, reserved zucchini flesh, taco seasoning, salt, and pepper, and cook until the beef is no longer pink.
- Mix in ½ cup of shredded cheese until melted.
- Place the zucchini boats in a baking dish and fill them with the beef mixture.
- Top with 1 cup of shredded cheese.
- Bake for 20 minutes until the zucchini is soft and the cheese is melted.
- Serve with toppings like sour cream, olives, jalapenos, and cilantro.
