The toppings

Instructions
- Prepare the taco seasoning by mixing all seasoning ingredients in a small bowl.
- Chop the onion and bell pepper.
- In a skillet over medium heat, brown the ground beef and onion for about 6-7 minutes.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the zucchini in halves or quarters and scoop out the seeds to create a trough.
- Once the beef is nearly cooked, add the peppers and taco seasoning, stirring to combine.
- Fill the zucchini boats with the meat mixture.
- Bake the zucchini boats in the oven for 18 minutes.
- Prepare the toppings while the boats are baking.
- Remove from the oven, let cool for a couple of minutes, then add the toppings and serve.
