Ingredients

The zucchini boats

  • ½ small zucchini zucchini
  • 1.5 lbs ground beef
  • ½ medium yellow onion, diced
  • 1 medium green pepper, diced

The taco seasoning

  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp onion powder
  • ¼ tsp cayenne
  • ¼ tsp sea salt
  • ¼ tsp ground pepper
  • ¼ tsp oregano

The toppings

  • 1 medium avocado, diced
  • 1 medium tomato, diced
  • ½ cup cilantro, sliced
  • ½ cup salsa

Instructions

  1. Prepare the taco seasoning by mixing all seasoning ingredients in a small bowl.
  2. Chop the onion and bell pepper.
  3. In a skillet over medium heat, brown the ground beef and onion for about 6-7 minutes.
  4. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  5. Cut the zucchini in halves or quarters and scoop out the seeds to create a trough.
  6. Once the beef is nearly cooked, add the peppers and taco seasoning, stirring to combine.
  7. Fill the zucchini boats with the meat mixture.
  8. Bake the zucchini boats in the oven for 18 minutes.
  9. Prepare the toppings while the boats are baking.
  10. Remove from the oven, let cool for a couple of minutes, then add the toppings and serve.
