Ingredients

The filling

  • 1 tablespoon olive oil
  • ½ cup diced red onion
  • 1 lb. lean ground beef
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin

The zucchini boats

  • 3 large zucchinis, sliced in half lengthwise and scooped out
  • cups red chili sauce
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro

Optional toppings

  • to taste diced tomatoes
  • to taste diced green onions
  • to taste diced avocado

Instructions

  1. Heat a skillet over medium-high heat and add olive oil and onions, sauté until soft.
  2. Add ground beef and cook until browned, then mix in garlic, smoked paprika, cumin, and salt.
  3. Place zucchini boats in a baking dish and fill them with the beef mixture.
  4. Pour red chili sauce over the filled zucchini and sprinkle with cheese.
  5. Cover with foil and bake at 350°F for 20 minutes, then uncover and bake for an additional 5 minutes.
  6. Garnish with cilantro and serve with optional toppings.
