Easy Ground Beef Enchilada Zucchini Boats

Instructions
- Heat a skillet over medium-high heat and add olive oil and onions, sauté until soft.
- Add ground beef and cook until browned, then mix in garlic, smoked paprika, cumin, and salt.
- Place zucchini boats in a baking dish and fill them with the beef mixture.
- Pour red chili sauce over the filled zucchini and sprinkle with cheese.
- Cover with foil and bake at 350°F for 20 minutes, then uncover and bake for an additional 5 minutes.
- Garnish with cilantro and serve with optional toppings.
