Instructions
- Preheat the oven to 350ºF and prepare a baking sheet.
- Slice the zucchinis in half lengthwise and scoop out the insides.
- Drizzle the zucchini halves with olive oil and sprinkle with salt.
- Cook the ground beef with taco seasoning in a skillet for 5-7 minutes.
- Add black beans, corn, crema, and half a cup of shredded cheese to the beef and mix well.
- Stuff each zucchini half with 3-4 tablespoons of the beef mixture and top with additional cheese.
- Bake for 13-15 minutes until the cheese is melted and the zucchini is cooked to your liking.
