Stuffed Zucchini

Instructions
- Trim the stems from the zucchinis and cut them in half lengthwise.
- Scoop out the flesh of the zucchini, leaving some at the bottom and set the flesh aside.
- Boil water in a medium saucepan, lightly salt it, and gently place the zucchinis in for about 2-3 minutes.
- Remove the zucchinis from the water and pat them dry.
- In a medium saucepan, heat oil and sauté onions and garlic until the onions are wilted.
- Add the ground meat and cook until browned, then add tomato sauce, Italian seasoning, paprika, salt, and pepper.
- Cook the mixture for about 3-5 minutes, then add the bell pepper and parsley, cooking for an additional 2 minutes.
- Mix in the reserved zucchini flesh if desired and adjust seasonings to taste.
- Grease a baking dish with cooking spray, fill the zucchini with the meat mixture, sprinkle with cheese if using, and bake at 350°F for 15-20 minutes.
- Serve warm.
