Ingredients

The salad

  • 4 medium golden beets
  • 2 cups mixed salad greens
  • 1 small red onion
  • ½ cup walnut halves
  • ¼ cup crumbled goat cheese

The dressing

  • ¼ cup orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ¼ teaspoon sea salt
  • teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F and wrap the beets in foil. Roast on a baking sheet for 45-60 minutes until tender. Allow to cool, then peel and slice thinly.
  2. In a small bowl, whisk together the orange juice, olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  3. In a large bowl, toss the mixed salad greens and red onion. Add the sliced beets and drizzle with the dressing, mixing gently.
  4. Top the salad with toasted walnuts and crumbled goat cheese if desired.
