Instructions
- Preheat the oven to 400°F and wrap the beets in foil. Roast on a baking sheet for 45-60 minutes until tender. Allow to cool, then peel and slice thinly.
- In a small bowl, whisk together the orange juice, olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
- In a large bowl, toss the mixed salad greens and red onion. Add the sliced beets and drizzle with the dressing, mixing gently.
- Top the salad with toasted walnuts and crumbled goat cheese if desired.
