Ingredients

The beets

  • 4 to 5 medium golden beets
  • extra-virgin olive oil for drizzling

The dressing

  • ¾ teaspoon ground coriander
  • ½ teaspoon honey
  • ¼ teaspoon ground cumin

The salad

  • 2 cups arugula
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped toasted pistachios
  • to taste sea salt
  • to taste freshly ground black pepper
  • optional microgreens

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap each beet in aluminum foil with olive oil, salt, and pepper, and roast on a baking sheet for 40 to 90 minutes until tender.
  3. Once cooked, let the beets cool, then peel the skins off.
  4. Slice the beets into desired sizes and refrigerate until ready to use.
  5. Prepare the lemon vinaigrette by mixing the dressing ingredients.
  6. Arrange the beets, arugula, feta, and pistachios on a platter, drizzle with dressing, and season with salt and pepper.
  7. Top with microgreens if desired and serve.
