Roasted Golden Beets

Instructions
- Preheat the oven to 400°F.
- Wrap each beet in aluminum foil with olive oil, salt, and pepper, and roast on a baking sheet for 40 to 90 minutes until tender.
- Once cooked, let the beets cool, then peel the skins off.
- Slice the beets into desired sizes and refrigerate until ready to use.
- Prepare the lemon vinaigrette by mixing the dressing ingredients.
- Arrange the beets, arugula, feta, and pistachios on a platter, drizzle with dressing, and season with salt and pepper.
- Top with microgreens if desired and serve.
