Ingredients

The beets

  • 1 bunch fresh beets

The dressing

  • 1 tablespoon extra virgin olive oil
  • 1 small lemon
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Trim the beet greens and reserve them for later.
  3. Scrub the beets with a vegetable brush and slice them thinly.
  4. Place the sliced beets in a baking dish.
  5. Whisk together lemon juice, olive oil, salt, and pepper in a small dish.
  6. Drizzle the vinaigrette over the beets.
  7. Roast the beets for about 25-30 minutes, stirring halfway through, until tender and golden brown.
