Instructions
- Preheat the oven to 400°F.
- Wash the beets and trim most of the greens, leaving a tuft of stem.
- For whole beets, toss them in olive oil and wrap individually in foil. Roast for 35-50 minutes depending on size, testing for tenderness.
- For beet wedges, wash and peel the beets, then cut them into wedges or halves. Drizzle with olive oil and toss to coat.
- Spread the wedges on a sheet pan and roast for 35-40 minutes.
