Ingredients

The beets

  • 4 pieces fresh beets

The oil

  • to taste none extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. Wash the beets and trim most of the greens, leaving a tuft of stem.
  3. For whole beets, toss them in olive oil and wrap individually in foil. Roast for 35-50 minutes depending on size, testing for tenderness.
  4. For beet wedges, wash and peel the beets, then cut them into wedges or halves. Drizzle with olive oil and toss to coat.
  5. Spread the wedges on a sheet pan and roast for 35-40 minutes.
